Ingredients
Base
- 1 cup nuts (cashews, almonds)
- 1/2 cup dates
- 1 cup dried coconut
- 1 tsp vanilla essense
- 1 pinch sea salt
- 1/4 cup coconut oil melted
Caramel Filling
- 1/2 cup cashews, soaked
- 1 cup dates
- 1/4 cup coconut oil
- 2 Tbsp sweetner (maple syrup, honey, rice malt syrup)
- 1 tsp vanilla essence
- 1 pinch sea salt
- 1/2 Tbsp Peanut Butter
- 1 Tbsp Organics NZ Maca Root Powder if you don't have Maca Powder, increase Peanut butter to 1 Tbsp
Chocolate Icing
- 1/2 cup Coconut oil, melted
- 1 Tbsp sweetener - honey, pure maple syrup
- 1/4 cup cacao or 100% cocoa powder
- 1 pinch sea salt
Instructions
Base
- Blend all dry ingredients into a fine crumb. Add wet ingredients and blend until all comes together. Add a dash of water if mixture is to dry.
Press into a lined dish and place in the fridge.
Caramel Filling
- Blend all ingredients in a food processor until it becomes really smooth. You may need to add a dash of boiling water. Spread over your base and place back in the fridge.
Chocolate Icing
- Melt all ingredients in a jug and then pour over caramel.Leave to set for an hour or two.Cut into slices and eat.
