Loaded with Camu Camu, (Vitamin C) this cake is surprisingly tasty and actually has no carrots in it. It has the same texture and taste and uses Camu Camu (vitamin C) instead. I prefer it with a simple lemon icing but i've given a cream cheese icing too. This cake offers your immune system a super vitamin c boost.

Ingredients
2.5cupsPlain Flour
4tbspOrganics NZ Camu Camu Powder
2tspBaking Soda
4Eggs
1tspSalt
1tsp Cinnamon
1cup Brown sugar
370mlVegetable oil
135gtinCrushed Pineapple
1/2cWalnuts (chopped)
Icing
100gCream cheese
60gSoft butter
1/2 cupStevia powdericing sugar is another option if you don't have Stevia.
1/2lemon Lemon juice
2tspLemon zest
Instructions
Preheat oven to 160c.
Mix dry ingredients together, then slowly add other ingredients as per the order above. Pour into a 26cm round tin.
Bake for approx 55 min or until the skewer comes out clean.
When the cake has cooled, ice it.Decorate with berries, nuts or dried fruit.

Add all ingredients together and mix thoroughly. When cake is cool - ice.
