Ingredients
12Medjool dates
1cupgluten-free rolled oatscan use standard if you don't have not gluten intollerant
1/2 cupalmonds
1tbspchia seeds
4tbsplemon juice
1tsplemon zest
1tspvanilla extract
1tspOrganics NZ Turmeric Powder
1/2cupground coconut for dusting
Instructions
Remove the pits from dates and soak them in hot water for several minutes. When the dates are softened, drain them and place in a food processor or blender. (save the water)
Add the other ingredients to a food processor and blend until mixture turns into a dough-like consistency. Add 1 Tbsp of saved water if the mixture is too dry.
With a small spoon, scoop the mixture and roll into balls. Roll the balls in shredded coconut and place on the baking sheet.
Store energy balls in an airtight container in the refrigerator until serving.
Notes
Lemon Turmeric Energy Balls will keep up to 3 months in the freezer.
